Bikini Recipe

Makes enough for 10 guests

Ingredients for the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Place all the components in a saucepan, heat until it reaches a gentle boil, stirring so the sugar melts. Then, remove from the stove allowing it to cool completely. Transfer into an sterilised bottle, close it and store in the refrigerator, where it will keep for about one month.

To make Premix: Combine all the spirits and syrup into one big jug, allow it to infuse for an hour, then filter it best through a fine cloth, making it fully clarified.

To serve: Pour 85ml of the cocktail base into your stirring glass packed with ice, and agitate gently for one minute to cool it down. Pour to a cold coupe glass or a similar vessel, decorate with a few cranberries and complete it by giving it a brief mist of mandarin oil over the top.
